  • 3 cups corn kernels (fresh, frozen, or canned)

  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup cotija cheese (or feta), crumbled

  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tbsp lime juice
  • 1 jalapeño, finely diced (optional, for spice)

Instructions

  • Cook the Corn:

    • Heat butter in a skillet over medium-high heat.
    • Add corn and cook for 5-7 minutes until slightly charred.
  • Mix the Dip:

    • In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, paprika, and garlic powder.
    • Stir in cotija cheese, jalapeño, and cilantro.
  • Combine & Serve:

    • Fold the roasted corn into the mixture until well combined.
    • Garnish with extra cotija cheese, cilantro, and chili powder.
  • Optional: Make It Warm & Cheesy:
