They are one of the simplest ways to use extra sourdough discard and require only a handful of ingredients. Perfect for snacking, serving with cheese boards, dipping into soups, or pairing with your favorite spreads, these homemade crackers are far better than store-bought versions.

  • 1 cup sourdough discard
  • 3 tablespoons melted butter or olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs (Italian seasoning, rosemary, or thyme)
  • Flaky sea salt for topping (optional)

Instructions

  • Preheat your oven to 325°F. Line a large baking sheet with parchment paper.
  • In a medium bowl, combine the sourdough discard, melted butter, salt, garlic powder, and dried herbs. Stir until the mixture is smooth and fully combined.
  • Pour the mixture onto the prepared baking sheet. Using an offset spatula or the back of a spoon, spread it into a very thin, even layer. The thinner the layer, the crispier the crackers will be.
  • Sprinkle the top with flaky sea salt if desired. You can also add extra herbs, cracked black pepper, sesame seeds, or everything bagel seasoning for additional flavor.
  • Bake for 10 minutes, then remove the baking sheet from the oven.
  • Using a pizza cutter or sharp knife, lightly score the surface into cracker-sized squares or rectangles. This makes it easier to break apart after baking.
  • Return the baking sheet to the oven and continue baking for 25 to 35 minutes, or until the crackers are golden brown and crisp throughout.
  • Check the edges occasionally because thinner areas may bake faster. If needed, remove the crisp edges and continue baking the center for a few additional minutes.
  • Allow the crackers to cool completely on the baking sheet. As they cool, they will become even crispier.
  • Break along the scored lines and store in an airtight container.

  • Spread the batter as thinly as possible for crispy crackers.
  • Uneven thickness may cause some crackers to bake faster than others.
  • Parchment paper prevents sticking and helps with easy cleanup.
