- 1 cup sourdough discard
- 3 tablespoons melted butter or olive oil
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon dried herbs (Italian seasoning, rosemary, or thyme)
- Flaky sea salt for topping (optional)
Instructions
- Preheat your oven to 325°F. Line a large baking sheet with parchment paper.
- In a medium bowl, combine the sourdough discard, melted butter, salt, garlic powder, and dried herbs. Stir until the mixture is smooth and fully combined.
- Pour the mixture onto the prepared baking sheet. Using an offset spatula or the back of a spoon, spread it into a very thin, even layer. The thinner the layer, the crispier the crackers will be.
- Sprinkle the top with flaky sea salt if desired. You can also add extra herbs, cracked black pepper, sesame seeds, or everything bagel seasoning for additional flavor.
- Bake for 10 minutes, then remove the baking sheet from the oven.
- Using a pizza cutter or sharp knife, lightly score the surface into cracker-sized squares or rectangles. This makes it easier to break apart after baking.
- Return the baking sheet to the oven and continue baking for 25 to 35 minutes, or until the crackers are golden brown and crisp throughout.
- Check the edges occasionally because thinner areas may bake faster. If needed, remove the crisp edges and continue baking the center for a few additional minutes.
- Allow the crackers to cool completely on the baking sheet. As they cool, they will become even crispier.
- Break along the scored lines and store in an airtight container.
