  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, finely minced

For the Dressing:

 

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

Step 1: Prepare Ingredients

Drain and halve the artichokes, slice the tomatoes, and thinly slice the red onion.

Step 2: Make the Dressing

In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, garlic, salt, and pepper.

Step 3: Assemble the Salad

In a large bowl, combine artichokes, tomatoes, red onion, basil, and parsley.

Step 4: Add Dressing

Pour the dressing over the salad.

Step 5: Toss Gently

Mix everything carefully to coat without breaking the artichokes.

Step 6: Chill and Serve

 

Let the salad sit for 15–20 minutes before serving for best flavor.
