Description

This Sunshine Salad is a bright, creamy, and refreshing dessert packed with juicy citrus, sweet pineapple, fluffy whipped topping, and soft marshmallows. It’s light, tropical, and perfect for spring and summer gatherings. Every bite is sweet, fresh, and full of sunshine flavors—just like the name.

  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1 (20 oz) can crushed pineapple (undrained)
  • 1 (15 oz) can mandarin oranges (drained)
  • 1 cup mini marshmallows
  • 1/2 cup shredded coconut
  • 1/2 cup chopped pecans (optional)
  • 1 cup whipped topping (Cool Whip)
  • Optional: fresh mint for garnish

Instructions

Step 1: Make the Base

In a large bowl, mix the dry pudding mix with the crushed pineapple (including juice). Stir until smooth and slightly thickened.

Step 2: Add Fruit and Mix-Ins

Fold in mandarin oranges, marshmallows, coconut, and pecans.

Step 3: Add Whipped Topping

Gently fold in whipped topping until creamy and fluffy.

Step 4: Chill

Refrigerate for at least 1 hour to allow flavors to blend and texture to set.

Step 5: Garnish and Serve

 

Top with extra coconut, nuts, or mint before serving.


Notes

  • Do not drain pineapple, it activates the pudding
  • Drain mandarin oranges well to avoid excess liquid
  • Fold gently to keep salad light and fluffy
  • Chill before serving for best texture
  • Add delicate fruits last to keep them intact
