  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tbsp butter

For the Eggs:

  • 2 large eggs
  • 2 tbsp milk or heavy cream
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp butter

For the Sandwich:

  • 2 bagels, toasted
  • 2 slices cheddar or American cheese
  • 1 tbsp mayonnaise (optional)
  • 1 tbsp Dijon mustard (optional)

Instructions

  1. Prepare the Steak:

    • Heat olive oil in a skillet over medium-high heat.
    • Season steak slices with salt, pepper, garlic powder, and smoked paprika.
    • Cook for 2-3 minutes per side until browned and tender.
    • Add butter to the pan, baste the steak, then remove from heat and set aside.
  2. Cook the Eggs:

    • In a small bowl, whisk eggs, milk, salt, and pepper.
    • Heat butter in a non-stick skillet over medium-low heat.
    • Pour in the eggs and scramble gently for 2-3 minutes until fluffy.
  3. Assemble the Bagels:

    • Spread mayonnaise and Dijon mustard on each toasted bagel half (if using).
    • Layer with steak, scrambled eggs, and cheese slices.
    • Close the sandwich and press lightly to melt the cheese.
  4. Serve & Enjoy:

    • Serve warm with a side of hash browns, fruit, or coffee.
