Description

These Sourdough Mini Corn Dogs are crispy on the outside, soft and fluffy on the inside, and made with sourdough discard for a subtle tangy flavor. They’re baked until golden and perfect for lunchboxes, game days, parties, or an easy family snack. Serve them with your favorite dipping sauces for a fun homemade treat.

  • 1 cup (240g) sourdough discard
  • 1 cup (120g) fine yellow cornmeal
  • 1 cup (125g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 large egg
  • ¾ cup (180ml) whole milk
  • 2 tablespoons unsalted butter, melted
  • 24 mini hot dogs or cocktail sausages
  • Cooking spray or melted butter for the baking sheet
  • Wooden sticks (optional)

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  • Pat the mini hot dogs dry with paper towels.
  • In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt.
  • In a separate bowl, whisk together the sourdough discard, egg, milk, and melted butter until smooth.
  • Pour the wet ingredients into the dry ingredients and stir just until combined. The batter should be thick enough to coat the hot dogs.
  • If using sticks, insert one into each mini hot dog.
  • Dip each hot dog into the batter, allowing the excess to drip off.
  • Arrange the coated corn dogs on the prepared baking sheet, leaving space between each one.
  • Bake for 14 to 18 minutes, or until the coating is puffed and lightly golden.
  • For extra color, broil for 1 to 2 minutes, watching carefully.
  • Cool for about 5 minutes before serving with your favorite dipping sauces.

Notes

  • Dry the hot dogs well so the batter sticks properly.
  • Don’t overmix the batter to keep the coating light and fluffy.
  • Fine cornmeal creates the smoothest texture.
  • Air fry at 375°F (190°C) for 8 to 10 minutes if preferred.
  • Freeze leftovers for quick snacks later.
