Bread Dough
- 1 cup (240g) sourdough discard
- 3½ cups (420g) bread flour
- 2¼ teaspoons instant yeast
- ¾ cup (180ml) warm whole milk
- 1 large egg
- ¼ cup (57g) unsalted butter, melted
- 1 tablespoon granulated sugar
- 1 teaspoon garlic powder
- 1½ teaspoons salt
Filling
- 4 ounces (115g) cream cheese, cubed
- 1½ cups (170g) sharp cheddar cheese, shredded
- 6 slices bacon, cooked and chopped
- 2 fresh jalapeños, diced
- 2 green onions, sliced
Topping
- ½ cup (55g) shredded sharp cheddar cheese
- 1 fresh jalapeño, thinly sliced
Instructions
- In a large bowl, combine the warm milk, sourdough discard, yeast, sugar, melted butter, and egg.
- Add the bread flour, garlic powder, and salt. Mix until a soft dough forms.
- Knead the dough for 8 to 10 minutes, or until smooth and elastic.
- Place the dough in a lightly greased bowl, cover, and let it rise for 1 to 1½ hours, or until doubled in size.
- Punch down the dough and flatten it into a rectangle.
- Evenly scatter the cream cheese, shredded cheddar, bacon, diced jalapeños, and green onions over the dough.
- Roll the dough tightly into a loaf, pinching the seam to seal.
- Place the loaf into a greased 9×5-inch loaf pan, cover, and let rise for 40 to 50 minutes.
- Preheat the oven to 350°F (175°C).
- Sprinkle the top with the remaining cheddar cheese and arrange the sliced jalapeños over the loaf.
- Bake for 40 to 45 minutes, or until golden brown and the internal temperature reaches 190°F (88°C).
- Cool in the pan for 10 minutes, then transfer to a wire rack. Let cool another 20 minutes before slicing.
Notes
- Remove the jalapeño seeds for a milder loaf.
- Use freshly shredded cheddar for the best melting texture.
- Allow the bread to cool before slicing to keep the filling in place.
- Cover loosely with foil if the cheese browns too quickly.
- Toast leftover slices for an extra crispy, cheesy finish.
