For the Focaccia Dough
- 1 cup (240g) sourdough discard
- 3½ cups (420g) bread flour
- 1½ cups (360ml) warm water
- 2 teaspoons instant yeast
- 2 teaspoons kosher salt
- 3 tablespoons extra virgin olive oil
Pizza Toppings
- ½ cup pizza sauce
- 8 ounces fresh mozzarella, sliced or torn
- 20 to 25 pepperoni slices
- 1 cup cherry tomatoes, halved
- ¼ cup grated Parmesan cheese
- 1 tablespoon fresh rosemary, chopped
- Fresh basil leaves, for garnish
- 2 tablespoons extra virgin olive oil, for drizzling
- Flaky sea salt, to taste
Instructions
- In a large bowl, combine the sourdough discard, warm water, bread flour, yeast, salt, and olive oil. Mix until a soft, sticky dough forms.
- Cover the bowl and let the dough rest for 20 minutes.
- Perform one set of stretch and folds, then cover and rest for 30 minutes. Repeat one more set.
- Cover and let the dough rise for 1½ to 2 hours, or until nearly doubled in size.
- Generously oil a 9×13-inch baking pan and transfer the dough to the pan. Gently stretch it toward the edges.
- Cover and let the dough rise again for 45 to 60 minutes.
- Preheat the oven to 425°F (220°C).
- Drizzle olive oil over the dough and press deep dimples into the surface with your fingertips.
- Spread the pizza sauce evenly over the dough.
- Top with the mozzarella, pepperoni, cherry tomatoes, rosemary, and Parmesan.
- Bake for 22 to 28 minutes, or until the crust is golden brown and the cheese is bubbly.
- Garnish with fresh basil, cool for 5 minutes, slice, and serve.

- Bread flour creates the best chewy focaccia texture.
- Drain fresh mozzarella well to prevent excess moisture.
- Don’t overload the pizza with toppings or the crust may become soggy.
