- 1 cup (240g) sourdough discard
- 3 cups (375g) all-purpose flour
- 2¼ teaspoons instant yeast
- ½ cup (120ml) whole milk, warmed
- ¼ cup (50g) granulated sugar
- 1 large egg
- ¼ cup (57g) unsalted butter, softened
- 1 teaspoon vanilla extract
- ½ teaspoon salt
For Frying
- Vegetable or canola oil, for frying
Sugar Coating
- 1 cup (200g) granulated sugar
Instructions
- In a large bowl, combine the warm milk, sourdough discard, yeast, sugar, egg, butter, and vanilla.
- Add the flour and salt, then mix until a soft dough forms.
- Knead the dough for 8 to 10 minutes, or until smooth and elastic.
- Place the dough in a lightly greased bowl, cover, and let it rise for 1 to 1½ hours, or until doubled in size.
- Punch down the dough and divide it into small portions, about 1 tablespoon each. Roll each portion into a smooth ball.
- Arrange the dough balls on a parchment-lined baking sheet. Cover and let them rest for 20 to 30 minutes.
- Heat 2 to 3 inches of vegetable oil to 350°F (175°C).
- Fry the doughnut holes in small batches for 2 to 3 minutes, turning occasionally until evenly golden brown.
- Transfer them to a paper towel-lined plate for a few seconds to remove excess oil.
- While still warm, roll each doughnut hole in granulated sugar until evenly coated.
- Serve warm for the best flavor and texture.
