Description

These Sourdough Discard Cinnamon Roll Bites are soft, fluffy, and filled with a gooey cinnamon-sugar swirl. Finished with a rich vanilla glaze, they’re the perfect way to use extra sourdough discard for breakfast, brunch, dessert, or a sweet afternoon treat.

Dough

  • 1 cup sourdough discard
  • ¾ cup warm milk (100–110°F)
  • 2¼ teaspoons instant yeast (1 packet)
  • ¼ cup granulated sugar
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • 1 teaspoon salt
  • to 4 cups all-purpose flour

Cinnamon Filling

  • ¼ cup unsalted butter, softened
  • ½ cup brown sugar
  • 2 tablespoons ground cinnamon

Optional Before Baking

  • ¼ cup heavy cream

Vanilla Glaze

 

  • 1½ cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  • Combine the warm milk, granulated sugar, and instant yeast in a large bowl. Let stand for 5 minutes until foamy.
  • Add the sourdough discard, egg, melted butter, salt, and flour. Mix until a soft dough forms.
  • Knead for 8–10 minutes until smooth and elastic.
  • Transfer the dough to a greased bowl, cover, and let rise for 60–90 minutes, or until doubled.
  • Mix the softened butter, brown sugar, and cinnamon to make the filling.
  • Roll the dough into a 12×16-inch rectangle.
  • Spread the cinnamon filling evenly over the dough.
  • Cut the dough into approximately 1½-inch squares and gently roll or fold each piece into a loose ball.
  • Arrange the bites in a greased 9×13-inch baking dish.
  • Pour the heavy cream over the dough if using.
  • Cover and let rise for another 30–40 minutes.
  • Preheat the oven to 350°F (175°C).
  • Bake for 22–28 minutes until lightly golden.
  • Whisk together the powdered sugar, milk, and vanilla until smooth.
  • Cool the cinnamon roll bites for 5 minutes, drizzle with the glaze, and serve warm.

  • Use room-temperature ingredients for the softest dough.
  • Avoid adding too much flour. The dough should feel soft and slightly tacky.
