Apple Filling

  • 6 medium Honeycrisp or Granny Smith apples, peeled and diced
  • ¼ cup (50g) brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • Pinch of salt

Sourdough Crisp Topping

  • 1 cup (100g) old-fashioned rolled oats
  • 1 cup (125g) all-purpose flour
  • ½ cup (100g) brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (120g) sourdough discard
  • ½ cup (113g) cold unsalted butter, cubed

For Serving (Optional)

 

  • Vanilla ice cream
  • Whipped cream
  • Caramel sauce

Instructions

  • Preheat the oven to 350°F (175°C) and lightly grease a 9-inch baking dish or 2-quart casserole dish.
  • In a large bowl, toss the apples with the brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, vanilla, flour, and salt.
  • Spread the apple mixture evenly into the prepared baking dish.
  • In another bowl, combine the oats, flour, brown sugar, cinnamon, and salt.
  • Add the cold butter and work it into the dry ingredients with a pastry cutter or your fingertips until coarse crumbs form.
  • Stir the sourdough discard into the crumble mixture until evenly distributed and clumps begin to form.
  • Sprinkle the crumble evenly over the apples without pressing it down.
  • Bake for 40 to 45 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges.
  • Cool for 10 to 15 minutes before serving.
  • Serve warm with vanilla ice cream, whipped cream, or caramel sauce if desired.
