- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp garlic powder
- 1 tbsp lemon juice
For the Spinach:
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 4 cups fresh spinach
- ½ cup heavy cream (or Greek yogurt for a lighter option)
- ¼ cup grated Parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
Instructions
-
Season & Sear the Salmon:
- Pat the salmon fillets dry and season with salt, pepper, smoked paprika, and garlic powder.
- Heat olive oil and butter in a skillet over medium-high heat.
- Sear salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes.
- Drizzle with lemon juice and remove from the pan.
-
Sauté the Spinach:
- In the same pan, add olive oil and garlic, cooking for 30 seconds until fragrant.
- Add spinach and cook until wilted (2-3 minutes).
- Stir in heavy cream, Parmesan, salt, and pepper, then let simmer for 1-2 minutes.
-
Assemble & Serve:
- Plate the creamy spinach and top with seared salmon.
- Sprinkle with red pepper flakes (if using) and serve immediately.
Notes
- For extra crispiness, broil the salmon for the last 2 minutes.
- For a dairy-free version, use coconut milk instead of heavy cream.
- To add more flavor, mix in sun-dried tomatoes or mushrooms with the spinach.
