For the Salmon:

  • 4 salmon fillets (about 6 oz each)
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tbsp lemon juice

For the Spinach:

  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • ½ cup heavy cream (or Greek yogurt for a lighter option)
  • ¼ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Season & Sear the Salmon:

    • Pat the salmon fillets dry and season with salt, pepper, smoked paprika, and garlic powder.
    • Heat olive oil and butter in a skillet over medium-high heat.
    • Sear salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes.
    • Drizzle with lemon juice and remove from the pan.
  2. Sauté the Spinach:

    • In the same pan, add olive oil and garlic, cooking for 30 seconds until fragrant.
    • Add spinach and cook until wilted (2-3 minutes).
    • Stir in heavy cream, Parmesan, salt, and pepper, then let simmer for 1-2 minutes.
  3. Assemble & Serve:

    • Plate the creamy spinach and top with seared salmon.
    • Sprinkle with red pepper flakes (if using) and serve immediately.

Notes

  • For extra crispiness, broil the salmon for the last 2 minutes.
  • For a dairy-free version, use coconut milk instead of heavy cream.
