For the Salad

  • 2 large ripe mangoes, sliced
  • 1 cucumber, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 small jalapeño, sliced thin
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh mint leaves
  • 1 avocado, sliced

For the Lime Dressing

 

  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon lime zest
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions

Wash and prepare all the fresh ingredients before assembling the salad. Slice the mangoes carefully into thin strips or chunks, depending on your preferred presentation. Choose ripe mangoes that are slightly soft for the sweetest flavor and juiciest texture.

Thinly slice the cucumber and red onion so they blend smoothly into the salad without overpowering the mango. Halve the cherry tomatoes and slice the jalapeño into thin rounds for a little heat and color.

In a small bowl, whisk together the lime juice, olive oil, honey, lime zest, minced garlic, salt, and black pepper until fully combined. The dressing should taste fresh, slightly sweet, and bright from the lime juice.

Arrange the mango slices, cucumber, tomatoes, avocado, red onion, and jalapeño on a large serving platter or bowl. Sprinkle the chopped cilantro and fresh mint over the top.

Drizzle the lime dressing evenly over the salad just before serving. Toss gently if desired, making sure not to break the mango or avocado pieces.

Let the salad sit for about 5 minutes before serving so the flavors can blend together beautifully.
