Ingredients
For the Chicken:
- 1.5 lbs chicken breast or thighs (cut into bite-sized cubes)
- 2 tablespoons olive oil
- 1 packet ranch seasoning mix
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
For the Garlic Parmesan Butter:
- 4 tablespoons butter (melted)
- 3 cloves garlic (minced)
- 1/2 cup grated parmesan cheese
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon red pepper flakes (optional)
Instructions
Place the chicken pieces in a large bowl. Add olive oil, ranch seasoning mix, garlic powder, onion powder, salt, and black pepper. Toss everything thoroughly until each piece is evenly coated. Let it sit for at least 15–20 minutes so the flavors absorb deeply into the chicken.
Thread the seasoned chicken pieces onto skewers, leaving a little space between each piece. This helps the heat circulate evenly so the chicken cooks properly without steaming. If using wooden skewers, soak them in water beforehand to prevent burning.
In a bowl, mix melted butter with minced garlic, grated parmesan, parsley, and red pepper flakes if using. Stir until well combined. The mixture should be rich, aromatic, and slightly thick from the cheese.
For grilling: Preheat grill to medium heat (around 375°F).
For oven: Preheat oven to 400°F and line a baking tray with parchment paper.
Place skewers on the grill or baking tray. Cook for about 12–15 minutes, turning halfway through. The chicken should develop a golden crust on the outside while staying juicy inside.
During the last 5 minutes of cooking, generously brush the skewers with the garlic parmesan butter. Turn and brush again to create layers of flavor. The butter will melt into the chicken and slightly crisp the parmesan.
Once fully cooked (internal temperature 165°F), remove from heat and brush one more time with the remaining butter mixture. Sprinkle extra parmesan and fresh parsley on top for a rich, restaurant-style finish.
