- 12 oz spaghetti, linguine, or penne
- 2 tablespoons olive oil
- 2 medium zucchini, sliced into half-moons
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 lemon, zested and juiced
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/3 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
- Before draining the pasta, reserve about 1/3 cup of the pasta cooking water. Drain the pasta and set aside.
- While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.
- Add the sliced zucchini and cook for 4 to 5 minutes, stirring occasionally, until the zucchini becomes tender and lightly golden around the edges.
- Add the minced garlic and red pepper flakes if using. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
- Reduce the heat to medium and stir in the lemon zest, lemon juice, salt, and black pepper.
- Add the cooked pasta to the skillet and toss until evenly coated with the zucchini mixture.
- Pour in the reserved pasta water and stir gently. The starchy water helps create a light silky sauce that coats the pasta beautifully.
- Add the Parmesan cheese and parsley. Toss until the cheese melts slightly and everything is well combined.
- Serve immediately with extra Parmesan cheese and fresh parsley on top.

- Do not overcook the zucchini or it may become mushy.
