Quick Zucchini Pasta is a fresh, light, and flavorful meal that’s perfect for busy weeknights. Tender pasta is tossed with sautéed zucchini, garlic, Parmesan cheese, and a simple lemon-infused sauce that comes together in just 20 minutes. It’s an easy recipe that feels comforting while still being packed with fresh vegetables.


Ingredients

  • 12 oz spaghetti, linguine, or penne
  • 2 tablespoons olive oil
  • 2 medium zucchini, sliced into half-moons
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 lemon, zested and juiced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

 

  • 1/3 cup reserved pasta water

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
  • Before draining the pasta, reserve about 1/3 cup of the pasta cooking water. Drain the pasta and set aside.
  • While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.
  • Add the sliced zucchini and cook for 4 to 5 minutes, stirring occasionally, until the zucchini becomes tender and lightly golden around the edges.
  • Add the minced garlic and red pepper flakes if using. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  • Reduce the heat to medium and stir in the lemon zest, lemon juice, salt, and black pepper.
  • Add the cooked pasta to the skillet and toss until evenly coated with the zucchini mixture.
  • Pour in the reserved pasta water and stir gently. The starchy water helps create a light silky sauce that coats the pasta beautifully.
  • Add the Parmesan cheese and parsley. Toss until the cheese melts slightly and everything is well combined.
  • Serve immediately with extra Parmesan cheese and fresh parsley on top.

Notes

  • Do not overcook the zucchini or it may become mushy.
  • Fresh lemon juice gives the best flavor.
  • Reserve pasta water before draining.
  • Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
  • Medium-sized zucchini provide the best texture.
