For the Tacos

  • 8 small corn or flour tortillas
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For the Toppings

 

  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1 avocado, diced or mashed
  • 1/2 cup crumbled cotija or feta cheese
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges for serving

Instructions

  • Heat the olive oil in a skillet over medium heat.
  • Add the black beans and stir in the chili powder, cumin, garlic powder, paprika, salt, and pepper.
  • Cook for 5 to 7 minutes, stirring occasionally, until the beans are heated through.
  • Lightly mash some of the beans with a spoon for added texture.
  • Warm the tortillas in a dry skillet or microwave.
  • Fill each tortilla with the seasoned black beans.
  • Top with shredded lettuce, diced tomatoes, red onion, avocado, and cheese.
  • Sprinkle with fresh cilantro.
  • Serve immediately with lime wedges on the side.
