For the Lasagna Layers:

  • 12 lasagna noodles, cooked
  • 2 cups cooked chicken, shredded
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper

For the Alfredo Sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning

For the Cheese Layer:

  • 2 cups ricotta cheese
  • 1 large egg
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated

For Garnish (Optional):

  • Fresh parsley, chopped
  • Red pepper flakes

Instructions

  1. Preheat & Prepare Baking Dish:

    • Preheat oven to 375°F (190°C).
    • Grease a 9×13-inch baking dish.
  2. Cook the Mushrooms:

    • Heat olive oil in a skillet over medium heat.
    • Add mushrooms, garlic, salt, and pepper; sauté for 5 minutes until softened.
  3. Make the Alfredo Sauce:

    • In a saucepan, melt butter over medium heat.
    • Whisk in flour and cook for 1 minute.
    • Slowly add heavy cream and milk, whisking until thickened.
    • Stir in Parmesan cheese and Italian seasoning; remove from heat.
  4. Prepare the Cheese Mixture:

    • In a bowl, mix ricotta cheese, egg, and Parmesan cheese until combined.
  5. Assemble the Lasagna:

    • Spread ½ cup Alfredo sauce on the bottom of the baking dish.
    • Layer 3 lasagna noodles, followed by ricotta mixture, chicken, mushrooms, and mozzarella cheese.
    • Repeat layers, finishing with noodles and Alfredo sauce on top.
    • Sprinkle with mozzarella and Parmesan cheese.
  6. Bake & Serve:

    • Cover with foil and bake for 30 minutes.
    • Remove foil and bake uncovered for 10-15 minutes until bubbly.
    • Let cool for 10 minutes, then garnish with fresh parsley.

Notes

  • For extra flavor, use grilled or rotisserie chicken.
  • To make it gluten-free, use gluten-free lasagna noodles and flour.
  • For a spicy kick, add a pinch of red pepper flakes to the sauce.
