Ingredients
For the Crust:
- 24 chocolate sandwich cookies (crushed)
- 5 tablespoons unsalted butter (melted)
For the Fudge Layer:
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 3 large eggs
- 1/3 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
For the Chocolate Mousse Layer:
- 1 1/2 cups heavy cream
- 1 cup semi-sweet chocolate chips
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
For the Topping:
- 1 1/2 cups whipped cream
- Chocolate shavings or chips
- Chocolate sauce (optional)
Instructions
Preheat your oven to 350°F (175°C). Mix the crushed chocolate cookies with melted butter until the texture resembles wet sand. Press the mixture firmly into the bottom and sides of a pie dish, making sure it’s evenly packed. Bake for 8–10 minutes, then remove and let it cool completely.
In a saucepan over low heat, melt the butter. Remove from heat and whisk in sugar, eggs, cocoa powder, vanilla, and salt until smooth and glossy. Pour this mixture into the cooled crust and spread evenly. Bake for 15–18 minutes until set but still slightly soft in the center. Let it cool completely before adding the next layer.
Melt the chocolate chips gently using a microwave or double boiler, then let it cool slightly. In a separate bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form. Slowly fold the melted chocolate into the whipped cream until smooth and airy.
Spread the chocolate mousse evenly over the cooled fudge layer. Use a spatula to smooth the top and create a thick, even layer. Place the pie in the refrigerator and chill for at least 3–4 hours so it sets properly.
Once chilled, spread or pipe whipped cream on top of the mousse layer. Sprinkle chocolate shavings or chips over the top and drizzle with chocolate sauce if desired for extra richness.
Use a sharp knife to slice clean pieces. For best results, wipe the knife between cuts to keep the layers neat and defined. Serve chilled for the best texture and flavor.
