Ingredients
For the Slaw:
- 3 cups green cabbage (thinly shredded)
- 2 cups red cabbage (thinly shredded)
- 2 ripe mangoes (peeled and julienned or diced)
- 1 cup carrots (shredded)
- 1 yellow or red bell pepper (thinly sliced)
- 1/4 cup fresh cilantro (chopped)
- 2 green onions (sliced)
For the Dressing:
- 1/4 cup lime juice (freshly squeezed)
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1 clove garlic (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon chili flakes (optional for heat)
Instructions
Thinly shred the green and red cabbage using a sharp knife or mandoline for even texture. Peel and cut the mangoes into thin strips or small cubes. Shred the carrots and slice the bell pepper into thin strips. Chop the cilantro and slice the green onions. Keeping everything evenly cut ensures a balanced bite in every forkful.
In a large mixing bowl, combine the cabbage, mango, carrots, bell pepper, cilantro, and green onions. Toss gently with your hands or tongs so all the ingredients are evenly distributed without crushing the mango pieces.
In a separate bowl or jar, whisk together lime juice, honey, olive oil, rice vinegar, grated ginger, minced garlic, salt, pepper, and chili flakes. Mix until the dressing is smooth and slightly thickened. Taste and adjust sweetness or acidity depending on how ripe your mangoes are.
Pour the dressing over the slaw gradually, tossing as you go. Make sure all the vegetables are lightly coated but not drenched. The goal is to enhance the flavors without making the slaw soggy.
Let the slaw sit for 10–15 minutes before serving. This allows the cabbage to slightly soften and absorb the dressing while keeping its crunch. The flavors will blend beautifully during this time.
