For the Green Harissa Paste:
- 1 cup fresh cilantro, packed
- 1 cup fresh parsley, packed
- 2 green chilies (Serrano or Jalapeño), chopped
- 2 cloves garlic
- ¼ cup olive oil
- 2 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp smoked paprika (optional)

Blend the Ingredients:
- In a food processor, combine cilantro, parsley, green chilies, garlic, lemon juice, cumin, coriander, salt, pepper, and smoked paprika.
- Pulse until finely chopped.

Add the Olive Oil:
- While blending, slowly drizzle in olive oil until a smooth paste forms.
- Adjust seasoning if needed.

Store & Serve:
- Transfer to a jar and drizzle extra olive oil on top to preserve freshness.
- Serve as a dip, marinade, or sauce for grilled meats, roasted veggies, or grain bowls.
Notes
- For extra heat, add more chilies or a pinch of cayenne.
- For a smoky flavor, roast the green chilies before blending.
- To make it tangier, add a splash of white wine vinegar.
