  • 46 bone-in or boneless pork chops
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 tbsp olive oil
  • 4 cups potatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ tsp paprika

Instructions

  1. Preheat & Prepare the Baking Dish:

    • Preheat oven to 375°F (190°C).
    • Lightly grease a 9×13-inch baking dish.
  2. Season & Sear the Pork Chops:

    • Season pork chops with salt, pepper, and garlic powder.
    • Heat olive oil in a skillet over medium heat and sear pork chops for 2-3 minutes per side until golden brown.
  3. Layer the Casserole:

    • Arrange sliced potatoes and onions in the baking dish.
    • In a bowl, whisk together cream of mushroom soup, sour cream, and milk.
    • Pour the mixture over the potatoes and spread evenly.
    • Sprinkle cheddar cheese over the top.
  4. Bake the Casserole:

    • Place the seared pork chops on top of the casserole.
    • Cover with foil and bake for 40 minutes.
    • Remove foil, sprinkle with paprika, and bake uncovered for an additional 10 minutes.
