Description

Grilled Mango Chicken is a juicy, flavorful dish with a perfect balance of sweet, tangy, and smoky flavors. Tender grilled chicken is coated in a rich mango glaze and finished with fresh mango pieces and herbs, making it ideal for summer meals or light dinners.

Chicken

  • 4 boneless, skinless chicken breasts or thighs
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil

Mango Marinade / Sauce

  • 1 cup fresh mango, blended
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon chili flakes (optional)
  • 2 tablespoons soy sauce

Garnish

 

  • Fresh mango chunks
  • Chopped cilantro
  • Lime wedges

Instructions

Prepare the Marinade

In a bowl, combine the blended mango, lime juice, honey, garlic, paprika, chili flakes, and soy sauce. Mix well until smooth. The marinade should be slightly thick with a balance of sweet and tangy flavors.

Marinate the Chicken

Pat the chicken dry, then season lightly with salt and pepper. Coat the chicken evenly with the mango marinade, making sure all sides are covered. Cover and refrigerate for at least 1 hour, or up to 4 hours for deeper flavor.

Preheat the Grill

Heat your grill to medium-high. Lightly oil the grates to prevent sticking. If using a grill pan, heat it until hot and lightly grease it.

Grill the Chicken

Place the marinated chicken on the grill and cook for about 5–7 minutes per side, depending on thickness. As it cooks, brush extra marinade on top to build layers of flavor and create a slightly caramelized surface.

Check for Doneness

Cook until the internal temperature reaches 165°F (75°C). The outside should have nice grill marks and a lightly charred glaze.

Rest and Serve

Remove the chicken from the grill and let it rest for 5 minutes. This keeps it juicy. Top with fresh mango chunks, chopped cilantro, and a squeeze of lime before serving.

  • Do not skip marinating time for best flavor

  • Avoid high heat that can burn the glaze
