  • 4 bone-in, skin-on chicken thighs (or drumsticks)
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

For the Potatoes:

  • 4 medium potatoes, cut into wedges
  • ¼ cup olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • Juice of ½ lemon

For Garnish (Optional):

  • Fresh parsley, chopped
  • Lemon wedges
  • Crumbled feta cheese

Instructions

  1. Preheat Oven & Marinate the Chicken:

    • Preheat oven to 400°F (200°C).
    • In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
    • Coat the chicken thighs in the marinade and let sit for 10 minutes.
  2. Prepare the Potatoes:

    • Toss potato wedges with olive oil, oregano, salt, pepper, garlic powder, and lemon juice.
  3. Assemble & Bake:

    • Arrange the potatoes in a 9×13-inch baking dish.
    • Place the marinated chicken on top.
    • Bake uncovered for 45-50 minutes, flipping the potatoes halfway through.
    • For crispy skin, broil for the last 3-5 minutes.
  4. Garnish & Serve:

    • Sprinkle with fresh parsley and serve with lemon wedges.
    • Optional: Add crumbled feta cheese for extra flavor.
