Description

This Fresh Cucumber Caprese Salad is light, crisp, and full of fresh flavor. It combines juicy tomatoes, cool cucumbers, creamy mozzarella, and fragrant basil with a simple dressing that brings everything together beautifully. It’s the perfect quick salad for summer meals, BBQs, or a refreshing side dish.

Ingredients

Scale

For the Salad:

  • 2 large cucumbers (sliced into rounds)
  • 2 cups cherry tomatoes (halved)
  • 8 oz fresh mozzarella balls (or cubed mozzarella)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh basil leaves

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar (or glaze)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 clove garlic (minced)

Instructions

Step 1: Prepare the Vegetables

Wash and slice the cucumbers into even rounds. Cut the cherry tomatoes in half so they release their juices slightly into the salad. Thinly slice the red onion and gently separate the rings. Tear or leave the basil leaves whole depending on your preference.

Step 2: Combine the Salad Base

In a large bowl, add the cucumbers, tomatoes, mozzarella, red onion, and basil. Gently toss everything together so the ingredients are evenly distributed without breaking the cheese.

Step 3: Make the Dressing

In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, minced garlic, salt, and black pepper until fully combined. The dressing should be smooth and aromatic.

Step 4: Dress the Salad

Pour the dressing over the salad gradually, tossing gently as you go. Make sure all ingredients are lightly coated but not overly soaked.

Step 5: Let the Flavors Blend

Allow the salad to sit for about 10 minutes before serving. This helps the cucumbers absorb the dressing and enhances the overall flavor without losing freshness.

Step 6: Final Toss and Serve

Give the salad one last gentle toss and taste for seasoning. Adjust salt, pepper, or balsamic if needed. Serve immediately for the best texture and freshness.

Notes

  • Use fresh mozzarella for the best creamy texture
  • Slice cucumbers evenly for consistent bites
  • Add dressing just before serving to avoid sogginess
  • Let it rest briefly to enhance flavor
  • Use ripe tomatoes for natural sweetness
