For the Goldfish Crackers:

  • 1 cup sharp cheddar cheese, shredded
  • ½ cup all-purpose flour
  • 2 tbsp unsalted butter, cubed and chilled
  • ¼ tsp salt
  • ¼ tsp garlic powder (optional, for extra flavor)
  • 12 tbsp cold water (as needed)

Instructions

  • Preheat & Prepare:

    • Preheat oven to 350°F (175°C).
    • Line a baking sheet with parchment paper.
  • Make the Dough:

    • In a food processor, pulse together cheese, flour, butter, salt, and garlic powder until it resembles coarse crumbs.
    • Add 1 tbsp cold water and pulse until the dough starts to come together. If too dry, add another ½ tbsp water at a time.
  • Roll & Cut Shapes:

    • Roll out the dough on a floured surface to ⅛-inch thickness.
    • Use a goldfish-shaped cookie cutter or small cutter to create shapes.
    • Place crackers on the prepared baking sheet.
  • Bake the Crackers:

    • Bake for 12-15 minutes, or until crackers are golden and crisp.
    • Let cool on a wire rack before serving.
  • Serve & Enjoy:

    • Store in an airtight container for freshness.

Notes

  • For extra crunch, bake for an additional 2-3 minutes.
  • For different flavors, swap cheddar for Parmesan or white cheddar.
  • For a spicier version, add a pinch of cayenne pepper.
