Ingredients
For the Cucumber Salad:
- 2 cups cucumber, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup cream cheese, softened
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
For the Sandwiches:
- 6–8 slices bread (white, wheat, or sandwich bread)
- Extra cucumber slices (optional for layering)
Instructions
Slice cucumbers thinly and pat dry with paper towels to remove excess moisture.
In a bowl, mix cream cheese, mayonnaise, lemon juice, dill, salt, and pepper until smooth.
Add cucumbers and red onion to the mixture and gently stir until well coated.
Spread a generous layer of the cucumber mixture onto bread slices.
Add extra fresh cucumber slices if desired for more crunch.
Top with another slice of bread and cut into halves or triangles.
Serve immediately for the best texture and freshness.
Notes
- Removing excess moisture from cucumbers is important to avoid soggy sandwiches.
- Use full-fat cream cheese for the best creamy texture and flavor.
- Fresh dill gives a bright, fresh taste, avoid dried dill if possible.
- Thinly sliced cucumbers work best for layering and texture.
- Let the mixture chill for 10–15 minutes for better flavor.
