Ingredients

Scale

For the Cucumber Salad:

  • 2 cups cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

For the Sandwiches:

  • 68 slices bread (white, wheat, or sandwich bread)
  • Extra cucumber slices (optional for layering)

Instructions

Step 1: Prepare Cucumbers

Slice cucumbers thinly and pat dry with paper towels to remove excess moisture.

Step 2: Make the Creamy Spread

In a bowl, mix cream cheese, mayonnaise, lemon juice, dill, salt, and pepper until smooth.

Step 3: Combine Salad

Add cucumbers and red onion to the mixture and gently stir until well coated.

Step 4: Assemble Sandwiches

Spread a generous layer of the cucumber mixture onto bread slices.

Step 5: Add Extra Layers

Add extra fresh cucumber slices if desired for more crunch.

Step 6: Close and Slice

Top with another slice of bread and cut into halves or triangles.

Step 7: Serve

Serve immediately for the best texture and freshness.

Notes

  • Removing excess moisture from cucumbers is important to avoid soggy sandwiches.
  • Use full-fat cream cheese for the best creamy texture and flavor.
  • Fresh dill gives a bright, fresh taste, avoid dried dill if possible.
  • Thinly sliced cucumbers work best for layering and texture.
  • Let the mixture chill for 10–15 minutes for better flavor.
