Description
This Crockpot Corn Dip is creamy, cheesy, and packed with sweet corn flavor. It’s one of those easy slow cooker recipes that always disappears first at parties, game days, potlucks, and holiday gatherings. With minimal prep and simple ingredients, the crockpot does all the work while creating a warm, rich dip that’s perfect with tortilla chips, crackers, or fresh vegetables.
Ingredients
Scale
- 2 cans (15 oz each) whole kernel corn, drained
- 1 can (15 oz) cream-style corn
- 8 oz cream cheese, softened
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (4 oz) diced green chiles
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
Instructions
- Spray the inside of your slow cooker lightly with nonstick cooking spray to make cleanup easier later.
- Add the drained whole kernel corn and cream-style corn to the crockpot. The combination of both types of corn creates the perfect balance of texture and creamy sweetness.
- Cut the cream cheese into cubes and add it to the slow cooker along with the sour cream. These ingredients melt together to form the rich and creamy base of the dip.
- Add the shredded cheddar cheese, Monterey Jack cheese, diced green chiles, garlic powder, onion powder, and black pepper. Stir gently to distribute the ingredients evenly.
- Cover the slow cooker and cook on LOW for 2 to 3 hours. Stir once or twice during cooking if possible to help the cheeses melt smoothly and evenly.
- Once the cheeses are completely melted and the dip is hot and creamy, stir thoroughly until everything is fully combined.
- Switch the slow cooker to the WARM setting if serving at a party. This helps keep the dip smooth and scoopable for several hours.
- Serve warm with tortilla chips, corn chips, crackers, toasted bread slices, or fresh vegetables.
Notes
- Freshly shredded cheese melts more smoothly than pre-shredded cheese.
- Do not cook on HIGH, as the dairy ingredients can separate.
- Stir occasionally for the creamiest texture.
- Cream-style corn adds richness and helps thicken the dip naturally.
- Keep the dip on WARM while serving to maintain the perfect consistency.
