  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  • Lightly grease the inside of a 6-quart slow cooker with cooking spray or olive oil.
  • Spread the diced onion evenly across the bottom of the slow cooker.
  • Arrange the chicken breasts in a single layer over the onions.
  • In a small bowl, whisk together the chicken broth, olive oil, garlic, Italian seasoning, paprika, onion powder, garlic powder, salt, and pepper.
  • Pour the seasoned broth evenly over the chicken.
  • Cover and cook on LOW for 3 to 4 hours or HIGH for 1½ to 2½ hours, depending on the thickness of the chicken breasts.
  • Check that the chicken reaches an internal temperature of 165°F using a meat thermometer.
  • Remove the chicken and let it rest for 5 minutes before slicing or shredding.
  • Spoon some of the cooking juices over the chicken before serving.
  • Garnish with fresh parsley, thyme, Parmesan cheese, or a squeeze of fresh lemon juice if desired.
