Description
Creamy Bacon Cucumber Salad is a rich, refreshing side dish that combines crisp cucumbers with a smooth, cheesy dressing and crispy bacon. It’s creamy, slightly tangy, and packed with flavor—perfect for quick lunches, BBQs, or easy family dinners.
Ingredients
- 3 cups cucumbers, sliced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1 tablespoon fresh dill (or 1 tsp dried)
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
Instructions
Wash and slice the cucumbers into even rounds. If they are very watery, lightly pat them dry with a paper towel to prevent the salad from becoming too thin later.
In a mixing bowl, combine mayonnaise and sour cream. Add garlic powder, dill, salt, and black pepper. Stir until smooth and well blended, creating a thick and creamy dressing.
Add the sliced cucumbers to the bowl with the dressing. Toss gently to coat each piece evenly without breaking them. The goal is to keep the cucumbers crisp while fully covered in the creamy mixture.
Fold in the shredded cheddar cheese and most of the crumbled bacon. Mix lightly so everything is evenly distributed while keeping some texture.
Cover and refrigerate for at least 30–60 minutes. This helps the flavors blend together and slightly thickens the dressing.
Before serving, sprinkle the remaining bacon on top for extra crunch and presentation. Serve cold for the best texture and taste.
