Chocolate Cake Batter
- 1 cup (240g) sourdough discard
- 1 cup (125g) all-purpose flour
- ¾ cup (150g) granulated sugar
- ¼ cup (25g) unsweetened cocoa powder
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup (120ml) whole milk
- ¼ cup (57g) unsalted butter, melted
- 1 teaspoon vanilla extract
- ½ cup (90g) semi-sweet chocolate chips
Chocolate Topping
- ½ cup (100g) brown sugar
- ¼ cup (50g) granulated sugar
- ¼ cup (25g) unsweetened cocoa powder
- 1¼ cups (300ml) hot coffee or hot water
For Serving (Optional)
- Vanilla ice cream
- Whipped cream
- Chocolate sauce
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
- In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt.
- Add the sourdough discard, milk, melted butter, and vanilla extract. Mix until smooth.
- Fold the chocolate chips into the batter.
- Spread the batter evenly into the prepared baking dish.
- In a small bowl, combine the brown sugar, granulated sugar, and cocoa powder. Sprinkle evenly over the batter.
- Carefully pour the hot coffee or hot water evenly over the topping. Do not stir.
- Bake for 35 to 40 minutes, until the top is set and the chocolate sauce is bubbling underneath.
- Let the cobbler cool for 10 minutes before serving.
- Spoon into bowls and serve warm with vanilla ice cream, whipped cream, or chocolate sauce.
Notes
- Don’t stir after adding the hot liquid or the sauce won’t form properly.
- Hot coffee enhances the chocolate flavor without adding a coffee taste.
- Bake until the top is just set for the best gooey center.
