For the Chicken and Bacon Ranch Melt:

  • 2 boneless, skinless chicken breasts, cooked and sliced
  • 4 slices thick-cut bacon, cooked until crispy
  • 4 slices sourdough or ciabatta bread (or sub sandwich roll)
  • 4 slices cheddar or provolone cheese
  • ΒΌ cup ranch dressing
  • 2 tbsp unsalted butter, softened
  • Β½ tsp garlic powder
  • Β½ tsp black pepper
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  • Cook the Chicken & Bacon:

    • Season chicken with black pepper and garlic powder.
    • Cook in a skillet over medium heat for 4-5 minutes per side until golden and fully cooked.
    • Remove and slice into thin strips.
    • Cook bacon in the same skillet until crispy, then drain on paper towels.
  • Assemble the Sandwiches:

    • Spread ranch dressing on one side of each bread slice.
    • Layer chicken, bacon, and cheese on two slices.
    • Top with the remaining bread slices.
  • Grill the Sandwiches:

    • Butter the outside of each sandwich.
    • Heat a skillet or griddle over medium heat.
    • Cook for 2-3 minutes per side, pressing down gently until golden brown and cheese is melted.
  • Serve & Enjoy:

    • Slice in half and sprinkle with fresh parsley if desired.
