For the Brownie Layers

  • 1 box brownie mix (plus ingredients listed on the box)

For the Ice Cream Filling

  • 1 quart vanilla ice cream (slightly softened)

Optional Toppings

 

  • ½ cup chocolate chips
  • ¼ cup chocolate syrup or ganache

Instructions

Step 1: Bake the Brownies

Prepare brownie batter according to package instructions. Divide evenly between two lined baking pans or bake one large batch and slice later. Bake and let cool completely.

Step 2: Prepare the Ice Cream Layer

Allow the ice cream to soften slightly so it’s easy to spread but not melted.

Step 3: Assemble the Sandwich

Place one brownie layer on a flat surface. Spread the softened ice cream evenly over the top.

Step 4: Add the Top Layer

Place the second brownie layer on top and gently press down to form a sandwich.

Step 5: Freeze

Freeze for at least 3–4 hours until firm.

Step 6: Slice

Cut into squares or rectangles using a sharp knife.

Step 7: Decorate (Optional)

 

Drizzle with chocolate syrup or sprinkle chocolate chips on top.
