- 2 cups cooked chicken, shredded
- 1/2 cup barbecue sauce
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1 tablespoon butter or olive oil

- Extra barbecue sauce
Instructions
- In a bowl, combine the shredded chicken and barbecue sauce until evenly coated.
- Lay one tortilla flat and sprinkle a layer of cheddar and mozzarella cheese over half of the tortilla.
- Add a layer of BBQ chicken on top of the cheese.
- Sprinkle additional cheese over the chicken.
- Fold the tortilla in half.
- Heat a large skillet over medium heat and add a small amount of butter or oil.
- Cook the quesadilla for 2 to 3 minutes per side until golden brown and crispy.
- Repeat with the remaining tortillas.
- Allow the quesadillas to rest for 1 minute before slicing.
- Cut into wedges and serve with your favorite dipping sauces.
