For the Chicken Nuggets:

  • 2 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 large eggs
  • 2 tbsp milk
  • 2 tbsp olive oil (for extra crispiness)

For Serving (Optional):

  • Ketchup
  • Honey mustard
  • Ranch dressing

Instructions

  • Preheat & Prepare Baking Sheet:

    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with parchment paper and lightly grease it.
  • Prepare the Breading:

    • In a bowl, mix panko breadcrumbs, Parmesan, garlic powder, paprika, salt, and black pepper.
    • In another bowl, whisk eggs and milk together.
  • Coat the Chicken:

    • Dip each chicken piece into the egg mixture, then coat with the breadcrumb mixture.
    • Place nuggets on the baking sheet and lightly drizzle with olive oil for extra crispiness.
  • Bake the Nuggets:

    • Bake for 18-20 minutes, flipping halfway through, until golden brown and cooked through.
    • For extra crunch, broil for 1-2 minutes at the end.
  • Serve & Enjoy:

    • Let cool slightly and serve with your favorite dipping sauces!

  • For extra crispiness, toast the panko breadcrumbs in a dry skillet before coating.
