Ingredients
For the Scones:
- 2 cups all-purpose flour
- ½ cup sourdough discard
- ⅓ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup cold butter, cubed
- ½ cup heavy cream
- 1 egg
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- ¾ cup chopped pecans
For the Maple Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons maple syrup
- 1–2 tablespoons milk
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Add cold butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
In another bowl, whisk together sourdough discard, cream, egg, maple syrup, and vanilla extract.
Pour wet ingredients into dry ingredients and mix gently until just combined. Fold in chopped pecans. Do not overmix.
Turn the dough onto a floured surface and shape into a round disk about 1 inch thick.
Cut into 8 wedges and place them on the prepared baking sheet, leaving space between each piece.
Bake for 18–22 minutes or until golden brown on top.
Mix powdered sugar, maple syrup, and milk until smooth and pourable.
Drizzle glaze over slightly cooled scones and let it set before serving.
