For the Fire Roasted Salsa:

  • 4 large Roma tomatoes
  • 1 small onion, halved
  • 2 cloves garlic, unpeeled
  • 1 jalapeño (or Serrano for more heat)
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • ½ tsp salt
  • ¼ tsp cumin
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Char the Vegetables:

    • Heat a cast iron skillet, grill, or broiler over high heat.
    • Drizzle tomatoes, onion, garlic, and jalapeño with olive oil.
    • Roast for 8-10 minutes, turning occasionally, until charred and blistered.
  2. Blend the Salsa:

    • Peel the garlic and add to a food processor or blender.
    • Add the charred tomatoes, onion, jalapeño, lime juice, salt, and cumin.
    • Blend until smooth or pulse for a chunky salsa.
  3. Season & Serve:

    • Stir in fresh cilantro and adjust seasoning to taste.
    • Serve warm or chilled with tortilla chips, tacos, or grilled meats.

Notes

  • For extra smokiness, add a pinch of smoked paprika.
  • For a spicier salsa, leave in the jalapeño seeds or use Serrano peppers.
  • For a milder version, swap jalapeño for roasted red bell pepper.
