For the Pumpkin Bread:

  • 1 (15 oz) can pumpkin puree
  • 4 large eggs
  • 1 cup vegetable oil
  • ⅔ cup water
  • 2 ½ cups granulated sugar
  • 3 ½ cups all-purpose flour
  • 2 tsp baking soda
  • 1 ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ½ tsp ground cloves
  • ¼ tsp ground ginger

Instructions

  1. Preheat & Prepare:

    • Preheat oven to 350°F (175°C).
    • Grease and flour two 9×5-inch loaf pans.
  2. Mix the Wet Ingredients:

    • In a large bowl, whisk together pumpkin puree, eggs, vegetable oil, water, and sugar until smooth.
  3. Combine Dry Ingredients:

    • In a separate bowl, sift together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  4. Combine & Mix:

    • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Bake the Bread:

    • Divide batter evenly between the prepared loaf pans.
    • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & Serve:

    • Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For added texture, mix in ½ cup chopped walnuts or chocolate chips.
  • For a lighter version, replace half of the oil with applesauce.
  • For extra spice, increase cinnamon to 1 ½ tsp
